We love soup, especially now that the weather is cooler. I found this one “Slow Cooker Chicken Enchilada Soup” on Dr. Josh Axe’s Facebook page, titled 22 Crockpot Soups and Stew recipes
Ingredients:
Boneless skinless chicken breasts (I used 2), chicken stock, red enchilada sauce, black beans, can of diced tomatoes, whole kernel corn, diced green chiles, 2 cloves garlic(I did not have any but it was still good), diced onion, 1 teaspoon ground cumin. Add all ingredients in a crockpot and cook on low for about 6 hours.

Finally, we topped it off with sour cream, tortilla chips, and diced cilantro. Other garnishes are shredded cheese or diced avocado.
It was delicious! I plan on trying some of the other soups on the link above.
