We recently remodeled our kitchen. It’s not completely finished due to the stay-at-home order for COVID-19 but enough is done and we absolutely love it! I’ve loved cooking more in my ‘new’ kitchen. (I don’t have a choice since restaurants are closed for dining in). 😋 We are advised to grocery shop only when absolutely needed, so some dinners are what’s on hand. Yesterday I made a have-on-hand nacho bake.
Barbara Ann Bakes Nachos:
First, I browned ground beef in a cast-iron skillet. Added a pack of taco seasoning and water. Cook that together according to the seasoning package.
Next, layer tortilla chips in a 9 x 13 baking dish. Add the beef mixture on top of the chips. (Next time, I will add cheese over the chips before layering the other ingredients. That may help keep it together more and help the chips not get soggy).
Next, I added what I had on hand:
Can of black beans, drained
Can of whole corn, drained (I used half)
Can of tomatoes with green chilies, drained
Top with Mexican blended cheese.
Bake at 425 for about 30 minutes in a preheated oven.
Serve with lettuce, salsa, sour cream, and guacamole.
